Description
Busy lives need quick energizing filling meals. With just a little prepping and some “using what you got” you can make a delicious Strawberry Chicken Grain Bowl, in just a matter of minutes.
Ingredients

- 1 cup farro (measured before cooking)
- 1 cup shredded or sliced cooked chicken breast
- 1 cup mixed roasted veggies (sweet potatoes, butternut squash, Brussels sprouts, broccoli)
- 4 whole strawberries, sliced
- 6 tbsp strawberry balsamic vinaigrette
Instructions
- Cook farro according to package instructions and divide into two bowls.
- Add cooked chicken on top of the farro (half in each bowl).
- Layer roasted vegetables evenly between both bowls.
- Top with fresh sliced strawberries.
- Drizzle each bowl with 3 tbsp of strawberry balsamic vinaigrette and enjoy!
