- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 chipotle peppers in adobo sauce, chopped (+ 1 tablespoon adobo sauce)
- 1 cup water or vegetable/chicken broth
- Salt to taste
- Optional: 1/4 teaspoon cumin, 1/2 teaspoon sugar
Instructions
- In a small saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 2-3 minutes.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Stir in tomato paste and cook, stirring constantly, for 1-2 minutes to slightly caramelize it.
- Add chopped chipotle peppers and adobo sauce, mixing well.
- Slowly add water or broth, whisking to create a smooth sauce.
- Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Remove from heat and blend the sauce until completely smooth using an immersion blender or by carefully transferring to a traditional blender.
- Season with salt (and optional cumin or sugar) to taste.
- Use immediately or store in an airtight container for up to a week in the refrigerator.
