Description

A bold, no-fuss family dinner packed with tender beef, hearty veggies, and the deep, smoky flavor of chili and coffee. Perfect for busy Sundays when the slow cooker needs to do the heavy lifting.


Ingredients

  • 3 lb Eye of Round Roast
  • 1 tbsp chili powder
  • 1/2 tbsp each: oregano, cilantro, cumin, garlic powder, onion powder
  • 2 tbsp instant coffee grounds
  • 1 tbsp beef base
  • 1 cup hot water
  • 1 medium yellow onion, chopped
  • 1 cup baby carrots
  • 1 small bag (about 20) new potatoes


Instructions

  1. Add roast to crockpot. Sprinkle with all spices.
  2. Mix hot water, coffee grounds, and beef base; pour over roast.
  3. Add vegetables.
  4.  Cook on low for 6 hours (best texture) or high for 4 hours.
  5. Serve warm with your desired amount of broth.
